carrot soup
organic indian cooking, california style: recipe for carrot soup
Ingredients:
1-2 tabs extra virgin olive oil
1 cup leeks finely chopped
1 clove garlic minced
1 tabs grated ginger
2 cups thinly sliced carrots
2-3 cups vegetarian broth
1 tabs rice, washed and drained
1/2 ripe pear cut in cubes
1 bay leaf
½ tsp Salt
1 cup skim milk
2-3 tsp cilantro mint chutney
A little touch of hot sauce (optional)
Freshly ground black pepper
It is as healthy as one can ask for, full of antioxidants and appetizing. It is a true comfort in a bowl in cold winter days.

Method
Heat oil in a heavy saucepan over medium heat; add leeks, garlic and ginger. Cook over medium heat for 5-6 minutes until slightly golden.

Add carrots, sauté for 6-8 minutes. Stir in the vegetarian broth, rice, pear cubes, bay leaf and salt. Bring it to a boil, reduce the heat, cover, and simmer for about 20 minutes or until the carrots are tender. Discard the bay leaf. Puree the mixture with in a blender or food processor.

Return the soup back to the pan. Add milk and heat the pureed soup gently on low heat and simmer for 3-4 minutes and serve hot with a dollop of cilantro mint chutney or hot sauce for a spicier kind if desired. Sprinkle with freshly ground black pepper.

Mushroom And Onion Rice

This beautiful looking rice, brownish in color, can take the center place on any dining table. It was discovered accidentally when onions were cooked much longer than I usually do. They turned dark brown in color, which in turn, gave such a nice brown look and sweetness to the finished rice. Add mushrooms for even more flavor.

Ingredients:

  • 2-3 Tbsp olive oil
  • 1 large onion, sliced thinly
  • 8 ounces sliced brown mushrooms
  • ¾ cup basmati rice, soaked and washed in 2-3 changes of water
  • ½ tsp salt or to taste
  • 1 ½ cup water
  • Half lemon
  • Freshly squeezed black pepper


Method:

Heat the oil in a nonstick pan on medium heat, add onions and sauté them until dark brown in color, about 8-10 minutes. Add mushrooms, sauté them for a couple of minutes. Add rice and salt. Mix them gently to get coated with the rest of the stuff. Stir in water and bring it to a boil ... see more
